השבוע נפגשתי עם שקמה הממהמת מהבלוג הטבעוני TIVONEAT. היה מושלם, טעים וסופר כיפי! רק שאני הגעתי במצב רוח קצת מעצבן, עייף ואיך לומר נאחסי….. כן, אין מה לעשות לפעמים יש ימים כאלה (בינינו לי יש כבר כמה שבועות כאלה) שלא משנה מה עושים מרגישים מעוכים, חסרי כוחות והכי גרוע לא ממש יודעים איך לצאת מזה.
כשחזרתי משקמה ישבתי עם עצמי ועשיתי קצת חושבים. מה גורם לי להרגיש תקועה, מה בדיוק חסר לי כדי להפוך את הלימון שקיבלתי ללימונדה וכל הקלישאות שמספרים לנו, וגורמות לנו עוד לגלגל עיניים (לפחות לי).
עברו כמה ימים, ולצערי אין לי בשורות ממש משמחות. אני עדיין במצב רוח נאחס. מרגישה תקועה ולא ממש בפוקוס על מה הולך לקרות מעכשיו הלאה. מה שכן, אתמול פרסמתי פוסט מאוד אישי באינסטוש, כזה שמעלה בכתב את כל התחושות וההתמודדויות שיש לי בימים האחרונים. אני עדיין בהלם מכמות התגובות שקיבלתי, ואיך דווקא מהמקום שתמיד מרגיש לי הכי לא אישי קיבלתי את התגובות הכי חמות ותומכות.

מצרכים
לפירות
- 300 גרם פירות חתוכים אנחנו השתמשנו במלון כתום, מנגו וענבים שחורים
- מיץ מחצי לימון
- 1 כפית תמצית וניל
- 1 כף סוכר חום
לעוגה
- 1 ו-1/2 כוסות חלב סויה או שקדים
- 1 ו-1/2 כפות חומץ או מיץ לימון
- 3/4 כוס שמן קנולה
- 1 ו-1/2 כוסות סוכר חום בהיר
- 3 כוסות קמח כוסמין לבן מנופה
- 2 כפיות אבקת אפייה
הוראות הכנה

מניחים בקערה פירות החתוכים, מיץ לימון, תמצית וניל וסוכר חום. מערבבים ומניחים בצד לרבע שעה.
שימו לב- עוגות עם פירות הן בדרך כלל רכות יותר ולחות יותר, זו לא עוגה יבשה וספוגית זו עוגה לחה מאוד.
הערות והמרות:
אתם יכולים להשתמש באיזה פירות שאתם אוהבים, שימו לב שיש פירות שישנו את צבע העוגה (כמו פטל ואוכמניות)
אפשר לאפות גם כ 12 מאפינס (זמן אפייה 25-30 דקות)
אפשר חצי כמות קמח מלא
בשביל נטול גלוטו- אפשר חצי כמות קמח נטול רב תכליתי וחצי כמות שקד טחון (לא ניסיתי אישית אבל עוקבים אמרו שזה עבד להם טוב)
אני שוב מציינת שהעוגה היא רכה ולחה במיוחד באיזורים של הפירות

מסננים את הנוזלים שהצטברו בקערה ומחזיר את הפירות לקערה

בקערה נפרדת טורפים את החלב והחומץ, עד לקבלת קצף עדין.

מוסיפים את השמן וממשיכים לטרוף.

בקערה נפרדת מערבבים קמח מנופה, סוכר ואבקת אפייה.

מוסיפים את התערובת היבשה לרטובה בשלוש נגלות, בין לבין מערבבים. שימו לב שמערבבים רק עד שהתערובת היבשה נטמעת. ערבוב יתר יצור עוגה דחוסה וכבדה.

מקפלים פנימה את הפירות המסוננים.

יוצקים את הבלילה לתבנית קפיצית 22 ס"מ מרופדת בנייר אפייה ומשומנת.

אופים בתנור שחומם מראש ל-170 מעלות, 45-55 דקות או עד שקיסם שננעץ בעוגה יוצא יבש וכמעט בלי פירורים.

מצננים היטב לפני שפורסים ומגישים.
