קיש פטריות חגיגי
מצרכים
לקלתית
- 1 ו-3/4 כוסות קמח אפשר גם קמח כוסמין
- 150 גרם חמאה חתוכה לקוביות
- 1/2 כפית מלח
- 2 חלמוני ביצה
- 2-3 כפות מים קרים
למלית
- 1 בצל סגול בינוני פרוס לעיגולים
- 1 כף חמאה
- 2 סלסילות פטריות שמפיניון טריות
- 1/2 כפית מלח
- 1/4 כפית פלפל שחור
- 4 ענפי טימין
- 200 מ"ל יוגורט לבן 3% או יותר אחוזי שומן
- 50 מ"ל שמנת לבישול
- 2 ביצים
- 1/4 כפית מלח
- 1/4 כפית פלפל שחור
- 3 כפות קמח
- 1/2 גליל גבינת עזים פרומעז או כל גבינה אחרת שאוהבים פרוסה לעיגולים בעובי 1/2 ס"מ
הוראות הכנה

מניחים במעבד מזון עם להב פלדה את הקמח, החמאה והמלח ומעבדים לתערובת פירורית. מוסיפים את החלמונים, ואת המים כל פעם כף, ומעבדים בפולסים עד שמתקבלים גושי בצק גדולים יחסית.

מעבירים את גושי הבצק למשטח עבודה מקומח קלות ומאחדים בידיים. משטחים לצורת דיסקית, עוטפים בניילון נצמד ומצננים במקרר במשך כשעה.

על משטח מקומח מרדדים את הבצק הקר לעיגול בעובי של כ-4 ס"מ. מעבירים אתצ הבצק לתבנית פאי 26 ס"מ ומשטחים את הבצק כך שיכסה היטב גם את הדפנות.

מעבירים את התבנית לפריזר ל-15 דקות.
מכינים את המלית

במחבת גדולה מאדים את הבצל הסגול עם החמאה.

מוסיפים את הפטריות, ענפי הטימין במלח והפלפל. מטגנים תוך ערבוב עד שהמים נעלמים לגמרי והפטריות רכות. מורידים מהאש ומצננים מעט. מסירים את ענפי הטימין.

בקערה בינונית מערבבים יוגורט, שמנת, ביצים, מלח ופלפל.

מוציאים את הקלתית מהפריזר ומפזריםם את תערובת הפטריות בתוכה בצורה שווה.

יוצקים מעל את תערובת היוגורט ומניחים מעל את עיגולי גבינת העזים.

אופים בתנור שחומם מראש ל-180 מעלות, במשך 30-40 דקות או עד שהקיש זהוב ויציב.
הערות
- אפשר להכין את הקיש מראש ולשמור במקרר בכלי סגור 3-4 ימים.
- מוציאים מהמקרר כחצי שעה לפני ההגשה ומחממים בתנור ב-150 מעלות כרבע שעה לפני ההגשה.
